Jalapeno Popper Soup transforms the beloved spicy, creamy appetizer into a cozy bowl of comfort with jalapeños, cream cheese, cheddar.
Ingredients
2 tablespoons olive oil
1 medium yellow onion, finely diced
3 cloves garlic, minced
4 large jalapeños, seeded and diced
4 cups chicken broth (or vegetable broth)
1 block (8 oz) cream cheese, softened
1 cup milk (whole or half-and-half)
1 cup shredded cheddar cheese
½ cup shredded Monterey Jack cheese
½ cup cooked
Salt and black pepper to taste
Optional garnishes: fresh cilantro, extra shredded cheese, dollop of sour cream
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, 5-7 minutes.
2. Stir in garlic and diced jalapeños. Cook 3-5 minutes until fragrant and slightly tender.
3. Pour in chicken broth and bring to a gentle simmer for 10 minutes.
4. Reduce heat to low. Add cream cheese in chunks, whisking until melted and smooth. Stir in milk until creamy.
5. Remove pot from heat. Stir in cheddar and Monterey Jack cheese until melted and combined.
6. Season with salt and black pepper.
7. Ladle into bowls and garnish with cilantro, sour cream, or extra cheese.
Notes
Add smoked paprika or a drop of liquid smoke for extra depth.
Stir in shredded chicken, cooked sausage, or ground turkey for more protein.
