Ingredients

  • 500g fresh mushrooms (shiitake, cremini, or button)
  • 3 tablespoons miso paste (white or red)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Optional: chili flakes for extra heat

Instructions

  1. Gently wipe the mushrooms with a damp cloth to remove dirt.
  2. Slice the mushrooms into uniform pieces for even cooking.
  3. In a large skillet, heat the sesame oil over medium heat until shimmering.
  4. Add the minced garlic and grated ginger to the skillet and sauté for 1-2 minutes until fragrant.
  5. Toss the sliced mushrooms into the skillet and cook for approximately 5-7 minutes until tender.
  6. In a small bowl, mix miso paste and soy sauce with warm water to create a smooth sauce.
  7. Pour the miso sauce over the mushrooms and stir to combine. Cook for another 2-3 minutes to heat through.
  8. Taste and adjust seasoning. Add chili flakes if desired.
  9. Remove from heat and garnish with chopped green onions and sesame seeds.
  10. Serve warm as a side dish or over rice.

Notes

For enhanced flavor, let the mushrooms marinate in the sauce for 15-20 minutes before cooking.
