Ingredients

Cream cheese (8 oz block, softened)
Heavy cream (1 cup)
Cheddar cheese (1 cup, shredded)
Monterey Jack cheese (1 cup, shredded)
Salt, black pepper, smoked paprika (to taste)
Crispy cheese chips or parmesan crisps
Smoked gouda or pepper jack (for variation)
Fresh herbs such as cilantro, parsley, or chives
Toasted seeds or nuts for added crunch
Instructions
1. In a large pot, melt butter. Add onion and cook until soft. Stir in garlic and jalapeños until fragrant.
2. Pour in the broth and bring to a gentle simmer.
3. Cut the cream cheese into chunks and stir until completely melted and smooth.
4. Add heavy cream, along with salt, pepper, and smoked paprika. Simmer gently for 5–7 minutes to let the flavors meld.
5. Reduce the heat and add shredded cheddar and Monterey Jack gradually, stirring until smooth and creamy.
