Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons dried lavender flowers (culinary grade)
  • 1/4 cup finely chopped almonds or walnuts (optional for added crunch)
  • 2 tablespoons granulated sugar
  • 1 teaspoon dried lavender (for sprinkling)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the honey, egg, and vanilla extract. Mix well until combined.
  3. In another bowl, whisk together the all-purpose flour, baking soda, salt, and dried lavender flowers.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chopped almonds or walnuts.
  5. Cover and refrigerate the dough for at least 30 minutes for better handling.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets.
  8. Flatten each ball slightly and sprinkle a pinch of granulated sugar and dried lavender on top.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze in a sealed bag or container for up to three months.
