Ingredients

- 2 lb campari tomatoes
- 1 large red bell pepper
- 4 cloves of garlic, peeled
- 1 tablespoon smoked paprika
- 1 teaspoon sumac
- 4 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup parsley, chopped
Instructions
- Cut the tomatoes into quarters and place them in a mixing bowl. Set aside.
- Cut the bell pepper into four parts; discard the stem and seeds.
- Place the cut bell pepper in a food processor with the garlic and process until they form a paste.
- Transfer the paste to a bowl and add paprika, sumac, salt, pepper, and olive oil. Mix well.
- Pour the dressing over the cut tomatoes and mix to cover on all sides.
- Mix in the chopped parsley and let chill for 30 minutes to blend flavors.
- Transfer to a salad serving bowl and serve chilled or at room temperature.
Notes
Use ripe tomatoes for the best taste; freshly chop parsley before serving for vibrant flavor. Feel free to adjust the spices to your preference.
