Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest
  • 1 cup blueberries
  • 1 cup sour cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture into the bottom of a springform pan.
  3. Beat the cream cheese until smooth. Gradually add sugar and mix well.
  4. Add eggs one at a time, mixing well after each. Stir in lemon juice and zest.
  5. Fold in the blueberries. Pour the cheesecake mixture over the crust.
  6. Bake for 60-70 minutes or until the center is set.
  7. Remove from the oven and allow it to cool at room temperature.
  8. Combine sour cream and powdered sugar, then spread it over the cooled cheesecake.
  9. Chill in the refrigerator for at least 4 hours before serving.

Notes

Serve chilled. Add fresh blueberries or drizzle with raspberry sauce for extra flair. Store leftovers in the refrigerator or freeze for up to two months.
