Ingredients

  • 1 tsp salt
  • 1 tsp baking powder
  • ⅓ cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp freshly grated lemon zest
  • ½ tsp vanilla extract
  • ½ cup milk
  • 1 cup blueberries (fresh or frozen)
  • 2 tbsp melted butter (for glaze)
  • ½ cup powdered sugar
  • ½ tsp vanilla extract (for glaze)
  • 2 tbsp freshly squeezed lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease it with nonstick spray.
  2. Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  3. Mix the melted butter, granulated sugar, vanilla extract, eggs, lemon zest, and lemon juice in a large bowl until well combined.
  4. Add the dry ingredients and milk alternately to the wet ingredients on low speed. Mix just until combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 55-60 minutes, or until a toothpick comes out clean.
  8. Cool the loaf in the pan for 15 minutes, then transfer it to a serving platter.
  9. Whisk melted butter, powdered sugar, lemon juice, and vanilla for the glaze until smooth, adding more lemon juice if needed.
  10. Drizzle the glaze over the warm loaf and let it soak in before slicing and serving.

Notes

For best flavor, use fresh lemons. Toss blueberries in flour to prevent sinking.
