Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- Mix the flour, softened butter, 1/4 cup sugar, and salt in a bowl until crumbly.
- Press half of this mixture into the bottom of the prepared dish.
- Whisk together the eggs, 1/2 cup sugar, lemon juice, lemon zest, and baking powder in another bowl.
- Pour this mixture over the crust in the baking dish.
- Sprinkle the remaining crumb mixture on top of the lemon filling.
- Bake for 20-25 minutes until the top is golden and the filling is set.
- Allow to cool completely before dusting with powdered sugar and slicing into bars.
Notes
These bars are best served chilled or at room temperature. Store in an airtight container in the fridge for up to a week, or freeze for up to three months.
