Ingredients

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- Mix together the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared baking dish.
- Bake for 15-20 minutes, until lightly golden.
- Whisk together granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt in another bowl. Pour over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool before cutting into bars. Dust with powdered sugar before serving.
Notes
Best served cool. Can store in an airtight container for up to three days at room temperature or refrigerate for about a week.
