  • 4 Tablespoons freshly squeezed lemon juice
  • ¾ cups fresh blueberries (plus extra for garnish)
  • 5½ cups powdered sugar
  • 1 stick unsalted butter (room temperature)
  • 1 teaspoon vanilla extract
  • Splash of milk (only needed if buttercream consistency is too dry)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
  2. In a bowl, mix together the flour and baking powder. Set aside.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. Stir in the milk, lemon juice, lemon zest, and vanilla extract.
  6. Gradually add the flour mixture to the wet ingredients, stirring until combined.
  7. Gently fold in the fresh blueberries.
  8. Fill each cupcake liner about two-thirds full with the batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Allow the cupcakes to cool completely before frosting.
  11. For the buttercream, beat the stick of unsalted butter until creamy.
  12. Gradually add the powdered sugar, mixing until well combined.
  13. Add the vanilla extract and a splash of milk if needed. Mix until the buttercream is smooth and fluffy.
  14. Gently fold in the remaining blueberries.

Use fresh blueberries for the best flavor; ensure your butter is at room temperature for easier mixing.
