- 12 cannoli shells
- 1 cup lemon curd
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- Zest of 1 lemon
Instructions
- In a bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Fold in the lemon curd gently until combined.
- Using a piping bag, fill the cannoli shells with the lemon mixture.
- In a separate bowl, whip egg whites and cream of tartar until soft peaks form.
- Gradually add granulated sugar and whip until stiff peaks form to create meringue.
- Pipe meringue on top of the filled cannoli shells and use a kitchen torch to toast the meringue lightly.
- Garnish with lemon zest and serve immediately.
Notes
Best enjoyed fresh for maximum crunch. Store filled shells and meringue separately for optimal texture.
