- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup lemon juice
- 1 tsp lemon zest
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup raspberry preserves
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Beat the softened butter and sugar until creamy in a mixing bowl.
- Add eggs, lemon juice, and lemon zest, mixing well.
- Combine flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared pan.
- Drop spoonfuls of raspberry preserves on top of the batter and use a knife to create swirls.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars.
