- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 cup granulated sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until well combined.
- Gradually mix in the dry ingredients, stirring until just combined.
- Form the dough into small balls, approximately one inch in diameter, and roll them in the reserved granulated sugar. Arrange them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are lightly golden. Allow to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, use coconut oil instead of butter. Enhance with white chocolate chips or nuts if desired.
