Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until well combined.
  4. Gradually mix in the dry ingredients, stirring until just combined.
  5. Form the dough into small balls, approximately one inch in diameter, and roll them in the reserved granulated sugar. Arrange them on a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes until the edges are lightly golden. Allow to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, use coconut oil instead of butter. Enhance with white chocolate chips or nuts if desired.
