- 1/2 cup unsalted butter (1 stick)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 teaspoon lemon zest
- 1 1/2 cups unbleached flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup powdered sugar
- 5 teaspoons lemon juice
- Drops of vanilla (optional)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter and sugar together in a mixing bowl until combined.
- Add the egg, vanilla, lemon juice, and lemon zest to the bowl. Mix well.
- Stir in the flour, baking powder, salt, and baking soda until the dough forms.
- Use a 1 tablespoon cookie scoop to create cookie dough balls. Place them about 1.5 inches apart on the prepared baking sheet.
- Bake for 7 minutes or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for 10 minutes. Then, transfer to a cooling rack.
- Combine the lemon juice with the powdered sugar for the glaze, adding drops of vanilla if desired. Mix until smooth.
- Drizzle the glaze over the cookies and let them cool completely.
Notes
For best results, use room temperature butter and don’t skip the lemon zest for enhanced flavor.
