Lemony Tuscan Artichoke Soup

Description

A delicious and hearty soup that brings Mediterranean flavors right to your kitchen, featuring artichokes, sun-dried tomatoes, and spinach.


Ingredients

  • 2 Tbsp extra virgin olive oil
  • 3 stalks celery, diced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced or crushed
  • Pinch red pepper flakes
  • 14 ounces canned artichoke hearts, drained and chopped
  • 1/2 cup marinated sun-dried tomatoes, sliced
  • 32 ounces chicken stock or broth
  • 1 Tbsp lemon juice
  • Salt and black pepper to taste
  • 1 cup packed fresh spinach
  • 1/2 cup heavy cream
  • 1 cup shredded or grated Asiago or Parmesan cheese

Instructions

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the celery, onion, garlic, and red pepper flakes and sauté for about 5 minutes until softened.
  3. Add the chopped artichokes, sun-dried tomatoes, chicken stock, and lemon juice; bring to a simmer and cook for another 5 minutes.
  4. Stir in the spinach and then add the heavy cream; bring back to a simmer and season with salt and pepper.
  5. Remove from heat and stir in the cheese until melted.
  6. Serve hot topped with extra cheese and cracked pepper.

Notes

For a lighter version, substitute heavy cream with half-and-half or omit it. Customize by adding other vegetables like carrots or zucchini.
