Ingredients

- 1 medium head of cabbage, chopped
- 1 large onion, diced
- 2 carrots, sliced
- 3 ribs of celery, chopped
- 1 can of diced tomatoes (14.5 oz)
- 6 cups of vegetable broth
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of paprika
- 1 teaspoon of Italian seasoning
- Optional: hot sauce to taste
Instructions
- In a large pot, sauté onions and garlic until translucent.
- Add carrots and celery, cooking for an additional 5 minutes.
- Stir in the chopped cabbage and cook for another 5 minutes.
- Add the diced tomatoes and vegetable broth.
- Season with salt, pepper, paprika, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add hot sauce if desired and serve warm.
Notes
Serve warm, garnished with fresh herbs or alongside whole-grain bread. Store in an airtight container in the fridge for up to one week, or freeze for three months.
