Description

Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 can of diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 clove garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic in a little bit of water or broth until softened.
  2. Add the carrots and celery, cooking for about 5 minutes.
  3. Stir in the chopped cabbage and cook for another 5 minutes.
  4. Add the diced tomatoes and vegetable broth, then season with thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes, until the vegetables are tender.
