Ingredients

- 1 head of cabbage, chopped
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 1 can of diced tomatoes (14 oz)
- 4 cups vegetable broth
- 1 clove garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic in a little bit of water or broth until softened.
- Add the carrots and celery, cooking for about 5 minutes.
- Stir in the chopped cabbage and cook for another 5 minutes.
- Add the diced tomatoes and vegetable broth, then season with thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes, until the vegetables are tender.
- Serve hot and enjoy your healthy soup!

For an additional kick, consider adding fresh herbs or a dash of hot sauce before serving.
