Ingredients

  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 21 oz lemon pie filling, canned or homemade

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. Mix the flour, sugar, baking powder, salt, and buttermilk in a bowl until smooth. Stir in the melted butter, vanilla, and lemon extract until well blended.
  3. Pour the batter into the prepared baking dish without stirring; let it sit on top of the melted butter.
  4. Add the lemon pie filling carefully over the batter, again without mixing.
  5. Bake for about 45 minutes or until the top is golden brown and set.
  6. Let cool for 10-15 minutes before serving.
  7. Serve warm, optionally with ice cream or whipped cream.

Notes

Make sure the butter is fully melted before adding the batter for a crispy edge. Can be stored in the refrigerator for up to 4 days.
