- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup sugar
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 21 oz lemon pie filling, canned or homemade
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
- Mix the flour, sugar, baking powder, salt, and buttermilk in a bowl until smooth. Stir in the melted butter, vanilla, and lemon extract until well blended.
- Pour the batter into the prepared baking dish without stirring; let it sit on top of the melted butter.
- Add the lemon pie filling carefully over the batter, again without mixing.
- Bake for about 45 minutes or until the top is golden brown and set.
- Let cool for 10-15 minutes before serving.
- Serve warm, optionally with ice cream or whipped cream.
Notes
Make sure the butter is fully melted before adding the batter for a crispy edge. Can be stored in the refrigerator for up to 4 days.
