- 6 hard-boiled eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Cajun seasoning
- Chopped green onions or paprika for garnish
Instructions
- Cut the hard-boiled eggs in half and remove the yolks.
- In a mixing bowl, mash the yolks with mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with Cajun seasoning and garnish with green onions or paprika.
