Ingredients

Boneless skinless chicken breasts or thighs

Olive oil

Salt

Black pepper

Unsalted butter

Yellow onion, diced

Carrots, peeled and diced

Celery stalks, diced

Garlic cloves, minced

Chicken broth (low sodium)

Heavy cream

All-purpose flour (or gluten-free alternative)

Dried thyme

Dried rosemary

Bay leaf

Fresh parsley, chopped

Lemon juice (optional)


Instructions

1. Season chicken with salt and pepper; sear in olive oil over medium-high heat until golden on all sides, then remove.

2. Reduce heat to medium; add butter, then sauté onion, carrots, and celery until softened, about 8–10 minutes.

3. Stir in minced garlic and cook 1 minute until fragrant.

4. Sprinkle flour over vegetables and cook, stirring, 1–2 minutes to form a roux.

5. Slowly whisk in chicken broth until smooth; add dried herbs and return seared chicken to the pot.

6. Bring to a gentle simmer; cover and cook 15–20 minutes until chicken is cooked through and vegetables are tender.

7. Remove chicken, shred with two forks, and return to the pot; stir in heavy cream.

8. Taste and adjust seasoning; stir in fresh parsley and optional lemon juice, then serve.

Notes

Use homemade chicken broth for extra depth.

Do not rush the simmer; gentle cooking helps flavors meld.

Soup thickens as it cools; thin with a splash of broth or water if needed.

Add small pasta (orzo, ditalini, egg noodles) during last minutes of simmering if desired.

Stir in spinach or kale at the end for greens.

For subtle heat, add a pinch of red pepper flakes.

A parmesan rind simmered in the broth adds richness.
