Description

Delicious cookies with a soft base, gooey marshmallows, and rich chocolate flavor, reminiscent of hot cocoa.


Ingredients

  • 1/2 cup packed light or dark brown sugar
  • 1 large egg, at room temperature

  • 1/3 cup natural unsweetened cocoa powder
  • 1/4 cup dry hot cocoa mix
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons milk (any kind)
  • 1011 large marshmallows, cut in half
  • 8 ounces semi-sweet chocolate, finely chopped

Instructions

  1. Prepare Your Ingredients: Ensure butter is softened at room temperature.
  2. Mix the Butters and Sugars: Beat together butter, granulated sugar, and brown sugar until fluffy.
  3. Add the Egg and Vanilla: Mix in egg and vanilla extract until well combined.
  4. Combine the Dry Ingredients: In a separate bowl, whisk flour, cocoa powder, hot cocoa mix, baking soda, and salt.
  5. Mix Dry and Wet Ingredients: Add dry mixture to wet and beat until combined. Mix in milk.
  6. Chill the Dough: Refrigerate dough for at least 30 minutes.
  7. Prepare Baking Sheets: Line baking sheets with parchment paper or silicone mats.
  8. Scoop the Dough: Roll dough into balls and place on baking sheets.
  9. Bake the Cookies: Preheat oven to 350°F (175°C) and bake for 10 minutes.
  10. Add Marshmallows: Press a marshmallow half into each cookie and bake for 2 more minutes.
  11. Flatten the Marshmallows: Gently press down the marshmallow with a spoon.
  12. Cool the Cookies: Transfer cookies to a wire rack to cool completely.
  13. Melt the Chocolate: Melt chocolate in a double boiler or microwave in increments.
  14. Chocolate Topping: Spoon melted chocolate over each cooled cookie and let set.

Notes
