Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Fresh parsley for garnish

Instructions

  1. Marinate the Chicken: In a bowl, mix together olive oil, dried oregano, garlic powder, salt, and pepper. Add the chicken thighs, making sure they are well-coated. Ideally, let them marinate for at least 30 minutes for maximum flavor.
  2. Cook the Chicken: Heat a skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side until it’s golden brown and reaches an internal temperature of 165°F (75°C).
  3. Make the Tzatziki Sauce: While the chicken is cooking, in another bowl, combine Greek yogurt, crumbled feta, lemon juice, minced garlic, and a pinch of salt and pepper. Mix until the sauce is smooth and creamy.
  4. Slice and Assemble: Once the chicken is cooked, slice it into strips. To assemble your gyros, spread a generous amount of tzatziki over the pita, add the chicken, and top with cherry tomatoes, cucumber, and red onion. Roll it up tightly and enjoy!

Notes

Feel free to substitute chicken thighs with chicken breast or experiment with different herbs or spices. Serve with fries or salad.
