Healthy and flavorful Mediterranean Chicken Zucchini Bake with tender chicken, fresh veggies, herbs, and optional feta cheese.
Ingredients
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
2 medium zucchini, sliced or chopped
1 pint cherry tomatoes, halved (or 1 large diced tomato)
1 small red onion, thinly sliced
1 bell pepper, chopped
1 tsp dried oregano
1 tsp garlic powder (or 3 cloves minced garlic)
1/2 tsp dried basil
Salt and black pepper to taste
Pinch red pepper flakes (optional)
3 tbsp olive oil
Juice of 1 lemon
Optional: crumbled feta cheese
Optional: fresh parsley or dill
Optional: Kalamata olives
Instructions
1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
2. In a bowl, toss chicken with 1 tbsp olive oil, half the oregano, garlic, salt, and pepper. Marinate 10-15 minutes if possible.
3. Add zucchini, tomatoes, onion, and bell pepper. Drizzle with remaining olive oil, season with basil, oregano, salt, and pepper. Squeeze lemon juice over mixture.
4. Spread mixture in a baking dish in a single layer.
5. Bake 25-30 minutes, until chicken reaches 165°F/74°C and vegetables are tender-crisp.
6. If using feta, sprinkle on during last 5-10 minutes of baking.
7. Garnish with parsley, dill, or olives before serving.

Swap in veggies like eggplant, artichoke hearts, or spinach.
Add mozzarella or provolone for extra cheesiness.
Mix in sun-dried tomatoes for a richer flavor.
Use fresh herbs like thyme or rosemary.
