Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper, then sear them for about 4-5 minutes on each side until cooked through. Remove and set aside.
  2. Add minced garlic to the same skillet and sauté until fragrant. Add orzo and stir for a minute.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer until orzo is al dente, about 10 minutes.
  4. Stir in lemon zest, lemon juice, cherry tomatoes, and spinach. Cook until the spinach is wilted.
  5. Serve the orzo mixture topped with the seared salmon and garnish with fresh parsley.

Notes

Make sure not to overcook the salmon; it should be flaky but still moist. You can substitute orzo with other small pasta shapes.
