- 4 cups corn (fresh, canned, or frozen)
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Cilantro for garnish
- Lime wedges for serving
Instructions
- Prepare the ingredients by chopping the onion and mincing the garlic. If using fresh corn, cut the kernels off the cob.
- In a crockpot, combine the corn, chopped onion, minced garlic, vegetable broth, chili powder, cumin, salt, and pepper. Stir to combine.
- Set the crockpot to low and cook for 6-8 hours, or use high setting for 3-4 hours if short on time.
- About 30 minutes before serving, add in the milk or cream and stir well.
- Blend the soup for a smooth consistency or leave it chunky based on preference.
- Serve hot, garnished with fresh cilantro and lime wedges on the side.
