Ingredients

  • 4 cups corn (fresh, canned, or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Prepare the ingredients by chopping the onion and mincing the garlic. If using fresh corn, cut the kernels off the cob.
  2. In a crockpot, combine the corn, chopped onion, minced garlic, vegetable broth, chili powder, cumin, salt, and pepper. Stir to combine.
  3. Set the crockpot to low and cook for 6-8 hours, or use high setting for 3-4 hours if short on time.
  4. About 30 minutes before serving, add in the milk or cream and stir well.
  5. Blend the soup for a smooth consistency or leave it chunky based on preference.
  6. Serve hot, garnished with fresh cilantro and lime wedges on the side.
