Ingredients

  • 4½ cups chopped cooked chicken
  • 4 oz cream cheese (room temperature)
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5 oz) can unsalted cream of chicken soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 Tbsp butter (melted)

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. Lightly spray a 9×9-inch baking dish with cooking spray.
  3. In a large mixing bowl, combine the chopped cooked chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix until smooth and creamy.
  4. Pour the chicken mixture into the prepared baking dish and spread it out evenly.
  5. In a small bowl, combine the crushed Ritz crackers and melted butter, stirring until the crackers are coated.
  6. Sprinkle the cracker mixture evenly over the chicken mixture in the baking dish.
  7. Bake uncovered for 30 to 40 minutes until hot and golden brown on top.
  8. Let cool for a few minutes before serving.

Notes

Use leftover chicken for an easy meal. You can add cooked vegetables like broccoli or spinach for extra nutrition.
