Instructions
- Preheat the oven to 350°F (175°C) and grease a mini cake pan.
- Whisk together the flour, baking powder, and salt in a bowl.
- Cream the butter and sugar in a separate bowl until light and fluffy.
- Beat in the eggs one at a time, then mix in the lemon juice, lemon zest, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter into the mini cake pan, filling each cavity about 2/3 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow to cool slightly before removing from the pan.
- Dust with powdered sugar before serving if desired.
