- Zest of 2 key limes
- 1 cup powdered sugar
- 2 tablespoons key lime juice (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, baking powder, and salt.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time to the butter mixture, mixing well after each addition.
- Stir in the key lime juice, vanilla extract, and zest of the key limes.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, mix powdered sugar with 2 tablespoons of key lime juice and drizzle over the cooled cake.
