  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup whipped cream

Instructions

  1. Combine gingerbread cookie crumbs and melted butter in a bowl, stirring until it resembles wet sand.
  2. Press the crust mixture evenly into the bottom of serving cups or glasses.
  3. Beat softened cream cheese and powdered sugar together in a separate bowl until smooth.
  4. Add ground ginger, ground cinnamon, and vanilla extract to the cream cheese mixture, and mix well.
  5. Gently fold in the whipped cream until combined.
  6. Spoon or pipe the cream cheese filling over the crust in each cup, leaving some space at the top for garnishing.
  7. Refrigerate the cheesecake cups for at least 2 hours to set.
