Description
These no bake s’more bars with oatmeal are chewy, chocolatey, and made with just 5 simple ingredients — a cozy no-cook treat everyone will love.
Ingredients
2 ½ cups rolled oats
1 cup mini marshmallows (plus more for topping)
1 cup chocolate chips
½ cup peanut butter (or almond butter)
⅓ cup honey or maple syrup
½ teaspoon vanilla extract
¼ teaspoon salt
Optional: ¼ cup crushed graham crackers (for topping)
Instructions
1. In a large mixing bowl, add the rolled oats and a pinch of salt. Set aside.
2. In a microwave-safe bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Microwave for 30–45 seconds, then stir until smooth.
3. Pour the warm mixture over the oats and mix until everything is coated.
4. Let the oat mixture cool slightly, then fold in the mini marshmallows and chocolate chips.
5. Line an 8×8 inch pan with parchment paper and press the mixture into an even layer.
6. Sprinkle extra marshmallows and crushed graham crackers on top (if using), gently pressing them into the surface.
7. Chill in the fridge for at least 1 hour, or until firm enough to slice.
8. Cut into bars and enjoy! Store leftovers in an airtight container in the fridge for up to 5 days.
Notes
Swap peanut butter for sunflower seed butter to make it nut-free.
Drizzle melted chocolate on top before chilling for extra sweetness.
Add ¼ cup chopped pretzels or coconut flakes for crunch.
