Description

These oatmeal banana cookies no bake are sweet, soft, and perfect when you want a homemade treat without turning on the oven. Made in one bowl with simple ingredients you likely already have.


Ingredients

2 ripe bananas (medium-sized, very spotted)

1 ½ cups rolled oats

½ cup peanut butter (or almond butter)

¼ cup mini chocolate chips

1 tbsp honey or maple syrup (optional)

½ tsp cinnamon

1 tsp vanilla extract

Pinch of salt


Instructions

1. In a medium bowl, mash the bananas until smooth.

2. Stir in the peanut butter, vanilla, cinnamon, and salt until well combined.

3. Fold in the oats and chocolate chips. If using honey or maple syrup, add it now.

4. Scoop the dough with a spoon or cookie scoop and shape into cookies on a parchment-lined tray.

5. Chill in the fridge for at least 30 minutes to firm up. Then enjoy!

Notes

Nut-Free Swap: Use sunflower seed butter instead of peanut butter.
