Description
These oatmeal raisin cookies no bake are soft, chewy, and made with simple wholesome ingredients — a sweet treat ready in just 5 minutes!
Ingredients
1 ½ cups quick oats
½ cup creamy peanut butter (or almond butter)
⅓ cup honey or maple syrup
½ teaspoon cinnamon
1 teaspoon vanilla extract
¼ teaspoon salt
½ cup raisins
Optional: 2 tablespoons mini chocolate chips or chopped walnuts
Instructions
1. In a large mixing bowl, stir together the peanut butter, honey (or syrup), cinnamon, vanilla, and salt until smooth.
2. Add in the oats and mix well until everything’s coated evenly.
3. Fold in the raisins and any optional add-ins like chocolate chips or chopped nuts.
4. Scoop tablespoon-sized portions and roll into balls or gently press into cookie shapes.
5. Place the cookies on a parchment-lined plate or tray.
6. Chill in the fridge for at least 30 minutes until firm.
7. Store leftovers in the fridge for up to 5 days.
Notes
Swap honey for maple syrup to make them vegan-friendly.
Add a tablespoon of flaxseed or chia for an extra health boost.
No peanut butter? Almond butter or sunflower seed butter works great too.
