Ingredients
1 tbsp olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
2 carrots, peeled and finely diced
2 celery stalks, finely diced
6 cups chicken broth
1 cup heavy cream
½ cup milk (whole or 2%)
¼ cup all-purpose flour
1 tsp dried thyme
½ tsp dried rosemary
Salt and black pepper to taste
2 cups cooked chicken, shredded or diced
1 lb package potato gnocchi
2 cups fresh spinach, roughly chopped
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté 5-7 minutes until softened.
2. Add garlic and cook 1 minute until fragrant.
3. Sprinkle in flour and stir constantly for 1 minute to create a roux.
4. Gradually whisk in chicken broth. Add thyme and rosemary. Simmer gently, stirring occasionally.
5. Add gnocchi and cook 2-3 minutes, until they float to the surface.
6. Reduce heat to low, stir in heavy cream, milk, and cooked chicken. Warm through gently without boiling.
7. Stir in fresh spinach and let it wilt, 1-2 minutes.
8. Season with salt and black pepper to taste. Serve hot.
