- 2 tablespoons soy sauce
- 4 eggs

Instructions
- Heat oil in a pan over medium heat.
- Sauté the chopped onion until translucent.
- Add mixed vegetables and cook for a few minutes.
- Add the cooked rice to the pan and stir in ketchup and soy sauce.
- Mix well and season with salt and pepper.
- In a separate bowl, beat the eggs and season with salt.
- In another pan, heat oil and pour in the beaten eggs.
- Cook until the edges begin to set, then gently scramble the eggs until soft and fluffy.
- Serve the ketchup fried rice on a plate and top with the scrambled eggs. Serve warm.
