Ingredients

  • 2 cups cooked rice
  • 1/2 onion, chopped
  • 1/2 cup mixed vegetables (like peas and carrots)
  • 2 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 4 eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat oil in a pan over medium heat.
  2. Sauté the chopped onion until translucent.
  3. Add mixed vegetables and cook for a few minutes.
  4. Add the cooked rice to the pan and stir in ketchup and soy sauce.
  5. Mix well and season with salt and pepper.
  6. In a separate bowl, beat the eggs and season with salt.
  7. In another pan, heat oil and pour in the beaten eggs.
  8. Cook until the edges begin to set, then gently scramble the eggs until soft and fluffy.
  9. Serve the ketchup fried rice on a plate and top with the scrambled eggs. Serve warm.

Notes

Use day-old rice for the best texture. Feel free to customize with your favorite vegetables or proteins.
