- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup whole milk
- Zest of 2 lemons
- 1/3 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
- In a large mixing bowl, whisk together eggs and sugar until pale. Add oil, milk, lemon zest, lemon juice, and vanilla. Mix well.
- Sift in flour, baking powder, and salt. Fold gently until just combined.
- Pour the batter into the pan and smooth the top. Bake for 28–32 minutes or until golden and a toothpick comes out clean.
- Let the cake cool, then dust with powdered sugar if desired, and cut into squares.
- Serve slightly warm or chilled, optionally with whipped cream.

Store in an airtight container at room temperature for up to three days or refrigerate for a week.
