Ingredients

  • 4 chicken thighs or breasts
  • 1 cup rice
  • 1 cup chicken broth
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Season the chicken with salt and pepper and place it in the pan, cooking until browned on both sides.
  3. Mix together honey, BBQ sauce, and soy sauce in a bowl. Pour this mixture over the chicken.
  4. Add the rice and chicken broth to the pan and stir to combine.
  5. Bring to a simmer, cover the pan, and cook for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
  6. Fluff the rice with a fork, adjust seasoning if needed, and garnish with green onions before serving.

Notes
