- 4 chicken thighs or breasts
- 1 cup rice
- 1 cup chicken broth
- 1/2 cup honey
- 1/2 cup BBQ sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Season the chicken with salt and pepper and place it in the pan, cooking until browned on both sides.
- Mix together honey, BBQ sauce, and soy sauce in a bowl. Pour this mixture over the chicken.
- Add the rice and chicken broth to the pan and stir to combine.
- Bring to a simmer, cover the pan, and cook for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
- Fluff the rice with a fork, adjust seasoning if needed, and garnish with green onions before serving.
Notes
Use even-size chicken pieces to ensure even cooking. Brown the chicken well for more flavor.
