  • 2 tablespoons milk
  • Gel food coloring (in pink, yellow, green, blue, and purple)
  • ½ cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt; gradually incorporate into the wet mixture.
  5. Mix in the milk until just combined.
  6. Divide the dough into five portions and tint with gel food coloring.
  7. Scoop 1 tablespoon of dough for each cookie, roll into balls, and place on the baking sheet 2 inches apart.
  8. Bake for 8-10 minutes until edges are set but tops are still soft; cool on wire rack.
  9. For the filling, beat softened butter until creamy, add powdered sugar, heavy cream, vanilla extract, and salt; mix until fluffy.
  10. Pair cookies by size, spread filling on one cookie, top with another, and press gently.
  11. Let assembled sandwiches rest for 10 minutes before serving.
