Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt; gradually incorporate into the wet mixture.
- Mix in the milk until just combined.
- Divide the dough into five portions and tint with gel food coloring.
- Scoop 1 tablespoon of dough for each cookie, roll into balls, and place on the baking sheet 2 inches apart.
- Bake for 8-10 minutes until edges are set but tops are still soft; cool on wire rack.
- For the filling, beat softened butter until creamy, add powdered sugar, heavy cream, vanilla extract, and salt; mix until fluffy.
- Pair cookies by size, spread filling on one cookie, top with another, and press gently.
- Let assembled sandwiches rest for 10 minutes before serving.
