Description

Delightful pastel-colored sugar cookie sandwiches filled with fluffy vanilla filling, perfect for any occasion.


Ingredients

  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder

  • 2 tablespoons milk
  • Gel food coloring (pink, yellow, green, blue, and purple)
  • ½ cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together for about 2 minutes until light and fluffy. Add the egg and vanilla extract, mixing until fully incorporated.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Gradually add the dry mixture to the wet mixture, mixing on low speed. If the dough is too hard, add milk to soften.
  4. Divide the dough into five portions and color each with gel food coloring, kneading until evenly tinted.
  5. Scoop about 1 tablespoon of dough, roll into balls, and place on the lined baking sheet with 2 inches of space between them. Bake for 8-10 minutes until edges are set but tops are slightly cracked. Cool on a wire rack.
  6. To make the filling, beat softened butter until smooth, then gradually add powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Mix until fluffy and spreadable.
  7. Once cookies are cool, pair by size, spread filling on one cookie, and top with another cookie.
  8. Allow assembled sandwiches to sit for 10 minutes to firm up before serving.
