Description

Ingredients

  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons milk
  • Gel food coloring (in pink, yellow, green, blue, and purple)
  • ½ cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract (for filling)
  • Pinch of salt (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2 minutes.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually incorporate this dry mixture into your wet mixture, mixing on low speed until a thick dough forms. Add the milk and mix until combined.
  5. Divide the dough into five portions and color each using gel food coloring.
  6. Scoop about 1 tablespoon of colored dough for each cookie, rolling it into balls and placing them on the prepared baking sheet, spaced 2 inches apart.
  7. Bake for 8-10 minutes until edges are set but tops remain soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  8. For the filling, beat the softened butter until creamy. Gradually add powdered sugar, heavy cream (or milk), vanilla extract, and a pinch of salt until fluffy and spreadable.
  9. Pair cooled cookies by size, spreading filling on the flat side of one cookie and topping with a matching cookie.
  10. Allow the sandwich cookies to set for about 10 minutes before serving.

Store in an airtight container at room temperature for up to three days, or freeze for up to three months.
