A delightful twist on the classic dessert, these cookies combine soft sugar cookies with sweet pineapple for a tasty treat perfect for any occasion.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 10–12 canned pineapple rings, well-drained and patted dry
- Additional sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, beating until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Take about 1½ tablespoons of dough, roll it into a ball, and flatten it slightly before placing on the baking sheet.
- Place a pineapple ring on top of each dough disk and gently press down.
- Sprinkle a little sugar on top of each pineapple ring.
- Bake for 12–14 minutes until the edges are golden.
- Allow to cool for 5 minutes on the baking sheets, then transfer to a wire rack to cool completely.
Notes
Serve plain or with ice cream. Store in an airtight container at room temperature for 4–5 days or refrigerate for up to a week.
