Description

A delightful twist on the classic dessert, these cookies combine soft sugar cookies with sweet pineapple for a tasty treat perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1012 canned pineapple rings, well-drained and patted dry
  • Additional sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, beating until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Take about 1½ tablespoons of dough, roll it into a ball, and flatten it slightly before placing on the baking sheet.
  7. Place a pineapple ring on top of each dough disk and gently press down.
  8. Sprinkle a little sugar on top of each pineapple ring.
  9. Bake for 12–14 minutes until the edges are golden.
  10. Allow to cool for 5 minutes on the baking sheets, then transfer to a wire rack to cool completely.

Notes

Serve plain or with ice cream. Store in an airtight container at room temperature for 4–5 days or refrigerate for up to a week.
