2–3 cups cooked chicken, shredded or cubed
1 (10.5 ounce) can condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of mushroom soup (or use another cream of chicken)
1/2 cup milk or chicken broth
1/2 cup sour cream
2 cups cooked white rice
1/2 cup chopped yellow onion
1/2 cup chopped celery
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/2 teaspoon garlic powder
Optional: pinch of paprika
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
2. In a large bowl, whisk together condensed soups, milk or broth, and sour cream until smooth.
3. Stir in cooked chicken, cooked rice, onion, celery, salt, pepper, and any optional seasonings; mix gently to combine.
4. Transfer mixture to the prepared dish and spread evenly.
5. Sprinkle shredded cheddar cheese over the top.
6. Bake 25–30 minutes until bubbly and lightly golden.
7. Let rest 5–10 minutes before serving.
Notes
Add 1 cup frozen mixed vegetables or sautéed mushrooms for extra color and nutrition.
For heat, add red pepper flakes or a dash of hot sauce.
Try different cheeses like Monterey Jack, Colby, or smoked gouda.
Top with crushed Ritz crackers, potato chips, or French fried onions during the last 10 minutes for crunch.
Swap sour cream with Greek yogurt if needed; leftover turkey works great too.
