Description

A simple and delicious recipe combining eggs with reduced-fat cheese and salami for a filling meal.


Ingredients

  • 3 eggs
  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs, to top

Instructions

  1. Start with a non-stick frying pan on medium heat and sprinkle half of the grated cheese evenly across the bottom to form a cheesy base. Let it melt slowly until crispy on the edges.
  2. While the cheese melts, crack the eggs into a bowl and whisk until smooth and airy.
  3. Pour the whisked eggs carefully over the melted cheese, lower the heat, and cover to cook evenly for a few minutes until the bottom is firm and golden.
  4. Carefully flip the egg-cheese base using a spatula.
  5. Spread passata on top, add salami slices, and sprinkle remaining cheese. Cover and cook until cheese has melted and toppings are heated through.
  6. Remove from the pan, sprinkle mixed herbs on top, and serve hot.

Notes

Great for using up leftover vegetables and can be adapted to suit different tastes and dietary preferences.
