A simple and delicious recipe combining eggs with reduced-fat cheese and salami for a filling meal.
Ingredients

- 3 eggs
- 60g (approx. 2 oz) reduced-fat cheese, grated
- 1 tbsp passata (about 15g)
- A few slices of salami (approx. 20g)
- Mixed herbs, to top
Instructions
- Start with a non-stick frying pan on medium heat and sprinkle half of the grated cheese evenly across the bottom to form a cheesy base. Let it melt slowly until crispy on the edges.
- While the cheese melts, crack the eggs into a bowl and whisk until smooth and airy.
- Pour the whisked eggs carefully over the melted cheese, lower the heat, and cover to cook evenly for a few minutes until the bottom is firm and golden.
- Carefully flip the egg-cheese base using a spatula.
- Spread passata on top, add salami slices, and sprinkle remaining cheese. Cover and cook until cheese has melted and toppings are heated through.
- Remove from the pan, sprinkle mixed herbs on top, and serve hot.
Notes
Great for using up leftover vegetables and can be adapted to suit different tastes and dietary preferences.
