Ingredients

- 4 ½ cups all-purpose flour
- 1 tablespoon sugar
- 2 ¼ teaspoons instant yeast
- 1 teaspoon salt
- 1 ¾ cups warm milk or water
- 2 tablespoons melted butter
- 9 cups water
- ½ cup baking soda
- 1 large egg (for an egg wash)
Instructions
- In a stand mixer bowl, combine the flour, sugar, yeast, warm milk, melted butter, and salt. Mix on medium speed for 4-5 minutes until smooth.
- Cover the bowl and let it rise in a warm place for 30-60 minutes until doubled in size.
- Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper.
- Bring 9 cups of water to a boil in a large pot and add the baking soda.
- Once the dough has risen, divide it into 12 pieces, roll into ropes, and cut into 1-2 inch sections.
- Drop each piece into boiling water for about 30 seconds to form a crust.
- Transfer the boiled pieces to baking sheets.
- Brush the tops with egg wash and sprinkle with salt.
- Bake for 12-14 minutes or until golden brown. Serve warm with dipping sauce.
Notes
For a lighter pretzel, substitute milk with water. For a dairy-free option, use a dairy-free butter brush instead of egg wash.
