Ingredients

  • 1 cup sweet potato, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Olive oil
  • Fresh herbs (such as thyme or parsley) for garnish

Instructions

  1. Prepare your ingredients: peel and dice the sweet potato, chop the onion, mince the garlic, and grate the ginger.
  2. In a slow cooker, combine the pumpkin puree, diced sweet potato, chopped onion, minced garlic, and grated ginger.
  3. Pour in the vegetable broth and season with salt and pepper to taste.
  4. Set your slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until the sweet potato is tender.
  5. Blend the mixture until smooth using an immersion blender or a regular blender in batches.
  6. Stir in the coconut milk and heat through for a few more minutes.
  7. Ladle soup into bowls and garnish with fresh herbs before serving.
