- 1 cup pumpkin puree
- 1 cup sweet potato, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Olive oil
- Fresh herbs (such as thyme or parsley) for garnish
Instructions
- Prepare your ingredients: peel and dice the sweet potato, chop the onion, mince the garlic, and grate the ginger.
- In a slow cooker, combine the pumpkin puree, diced sweet potato, chopped onion, minced garlic, and grated ginger.
- Pour in the vegetable broth and season with salt and pepper to taste.
- Set your slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until the sweet potato is tender.
- Blend the mixture until smooth using an immersion blender or a regular blender in batches.
- Stir in the coconut milk and heat through for a few more minutes.
- Ladle soup into bowls and garnish with fresh herbs before serving.
Notes
This soup can be refrigerated for up to 4-5 days or frozen for 2-3 months. Adjust the spices to your liking for added flavor.
