Description

Ingredients

  • 1 store-bought refrigerated pie crust (or frozen)
  • 1 ¾ cups pumpkin puree (one full can)
  • ¾ cup brown sugar (firmly packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 ¾ cups whole milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Press the pie crust into a 9-inch pie dish.
  3. In a mixing bowl, whisk together the pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, ginger, and salt. Then add the whole milk and whisk until smooth.
  4. Pour the mixture into the prepared pie crust, covering the edges with foil if desired.
  5. Bake for about 60-70 minutes, checking for a slight jiggle in the center.
  6. Allow the pie to cool on a wire rack and then chill in the fridge for around 5 hours.
  7. Serve with whipped cream or your favorite toppings.

Notes

Store leftover pie in the refrigerator for 3-4 days or freeze for up to 2 months.
