Description

Ingredients

1 cup canned pumpkin puree

½ cup unsalted butter, melted

1 cup brown sugar

1 large egg

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

2 tsp pumpkin pie spice

½ tsp salt

1 cup chocolate chunks

1 cup mini marshmallows

1 cup crushed graham crackers


Instructions

1. Whisk pumpkin puree, melted butter, brown sugar, egg, and vanilla until smooth.

2. In another bowl, mix flour, baking soda, baking powder, pumpkin spice, and salt. Fold into wet mixture.

3. Gently fold in chocolate chunks, marshmallows, and graham crackers.

4. Scoop dough onto a lined baking sheet.

5. Bake at 350°F for 10–12 minutes until golden. Cool slightly before serving.

Notes

Store cookies in an airtight container with a slice of bread to keep them soft.

Swap chocolate chunks for white chocolate for a sweeter twist.

Try stuffing a whole marshmallow in the center for an extra gooey surprise.
