Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread
  • Steamed rice

Instructions

  1. In a large bowl, combine chicken with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt; mix well and marinate for at least 30 minutes.
  2. Heat vegetable oil in a skillet over medium heat; cook marinated chicken in batches until browned and cooked through, about 5-6 minutes per side. Set aside.
  3. In the same skillet, melt butter, add minced garlic and diced onion; sauté until soft, about 2-3 minutes.
  4. Add tomato sauce, sugar, salt, and black pepper; simmer for about 5 minutes.
  5. Stir in heavy cream, cayenne pepper, garam masala, and curry powder; simmer gently for another 10-15 minutes.
  6. Return cooked chicken to skillet, stir to coat in sauce, and heat through for another 5 minutes.
  7. Serve with steamed rice or naan bread, garnished with parsley if desired.

Notes

For added flavor, marinate the chicken overnight. Adjust spice levels according to your taste preference.
