- 1/2 cup fresh or frozen raspberries (plus more for topping)
- Sliced almonds or chopped nuts
- Shredded coconut
- Extra drizzle of maple syrup
Instructions
- Combine chia seeds, almond milk, maple syrup, and vanilla extract in a medium bowl. Stir well to mix all the ingredients.
- Mash the raspberries in a separate bowl until smooth.
- Pour the mashed raspberries into the chia mixture and stir until combined.
- Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 120 minutes or overnight.
- Stir the pudding well once set.
- Serve in bowls topped with sliced almonds, shredded coconut, extra raspberries, and a drizzle of maple syrup.
Notes
For a richer flavor, let the pudding sit longer, up to overnight. You can blend the raspberry mixture for a smoother texture and experiment with different fruits like strawberries or blueberries.
