Instructions

  1. Combine chia seeds, almond milk, maple syrup, and vanilla extract in a medium bowl. Stir well to mix all the ingredients.
  2. Mash the raspberries in a separate bowl until smooth.
  3. Pour the mashed raspberries into the chia mixture and stir until combined.
  4. Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 120 minutes or overnight.
  5. Stir the pudding well once set.
  6. Serve in bowls topped with sliced almonds, shredded coconut, extra raspberries, and a drizzle of maple syrup.

Notes

For a richer flavor, let the pudding sit longer, up to overnight. You can blend the raspberry mixture for a smoother texture and experiment with different fruits like strawberries or blueberries.
