- 4 large apples, peeled and diced
- 1/4 cup salted butter, cubed
- 2 tbsp apple cider
- 1/2 cup brown sugar, packed
- 1 and 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1 cup granulated sugar (for caramel sauce)
- 6 tbsp salted butter, cubed (for caramel sauce)
- 1/2 cup + 1 tbsp heavy cream
- Pinch of flaky sea salt
- 1/4 cup salted butter, melted (for crumble)
- 1/4 cup light brown sugar, packed (for crumble)
- 1 and 1/2 tbsp granulated sugar (for crumble)
- 1/2 cup + 1 tbsp all-purpose flour (for crumble)
- 3/4 tsp cinnamon (for crumble)
- Pinch of salt (for crumble)
Instructions
- Make the Cookie Dough: In a large bowl, cream the softened butter with both sugars until smooth. Beat in the eggs and vanilla extract, and then gradually mix in the dry ingredients. Chill the dough for at least 30 minutes.
- Prepare the Apple Filling: In a skillet, combine the diced apples with butter, apple cider, and the other filling ingredients. Cook on medium heat for 15-18 minutes until the apples are soft and fragrant. Set aside to cool.
- Create Salted Caramel Sauce: In a saucepan over medium heat, combine sugar and butter. Stir until melted and lightly golden. Gradually whisk in heavy cream and salt; let it cool until thickened.
- Scoop & Chill the Dough: After chilling the dough, scoop out balls using a cookie scoop and place them on a baking sheet. Chill in the refrigerator for 4 hours for optimal texture.
- Preheat Oven and Prepare Crumble: Preheat the oven to 350°F (175°C). Mix melted butter with the crumble ingredients and bake until lightly golden, about 12-14 minutes.
- Bake the Cookies: Increase the oven temperature to 365°F. Roll the chilled dough balls in cinnamon sugar, place them on the baking sheet, and bake for 10-12 minutes until golden.
- Assemble the Cookies: Make an indent in the center of each cookie, fill it with the apple filling, sprinkle the crumble on top, and drizzle with salted caramel sauce.
- Serve & Enjoy: Pair your cookies with a scoop of ice cream or a dollop of whipped cream, and enjoy the delightful combination of flavors while they’re warm!
