Description

Deliciously creamy Seafood Stuffed Potatoes filled with shrimp and crawfish, topped with cheese.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crawfish tails
  • 1 cup shredded cheese (Cajun or any preferred type)
  • 1/2 cup cream cheese
  • 1/2 cup milk
  • 1/4 cup green onions, chopped
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Butter for baking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the russet potatoes in the oven for about 45-60 minutes until tender.
  3. Once cooked, let the potatoes cool slightly, then cut them in half lengthwise and scoop out the insides into a bowl.
  4. In the bowl with the potato flesh, add the shrimp, crawfish, cheese, cream cheese, milk, green onions, Cajun seasoning, and mix until well combined.
  5. Spoon the mixture back into the potato skins, mounding them generously.
  6. Place the stuffed potatoes back on a baking sheet, top with additional cheese if desired, and return to the oven for about 15-20 minutes until heated through and cheese is melted.
  7. Serve warm and enjoy your Southern comfort food!

Notes

Choose fresh seafood for the best flavor. For extra kick, add diced jalapeños. Don’t rush the baking time for soft and fluffy potatoes.
